Sink shape choices

Had our first real planning meeting with the cabinet guy yesterday and I guess I'm a tad bit less overwhelmed. Maybe lol. Sinks are mostly what kept me awake last night.

We will have a prep sink in the island, I'm doing one on the bigger side and probably a squarish or rectangular shape instead of round. Unless anyone chimes in with the pros of round. And do you have a garbage disposal in your prep sink also? I'm thinking I might put one there also.

Main sink - I'm so confused about this one. I like the idea of one big bowl for the large pots and pans and dogs (altho we are going to have a doggie shower in the mudroom. ) BUT, I'm a clean as I go type. I keep a sink of hot soapy water while I'm cooking. Then when you do have the small hand wash items, or even pots, and have the dish water how do you rinse? I've always had double bowls, one for dish water and one side for rinsing.

I feel rather silly for asking this, but would you explain the mechanics to me of how you use a single bowl on a day to day basis? Once I decide the configuration then I can move on to stressing over apron front or undermount and then the composition of it........
