Pantry Query

I would like to maximize the storage in my pantry during my remodel, and thought a column of Lazy Susans in the right hand corner was the best way to do that. I have an appliance garage that will be stealing space from the pantry, on the right side as well. It is 15 inches deep and 36 inches wide. The way my KD drew it, the appliance garage is taking up more pantry space than I think is necessary, and it is potentially eating into my ability to utilize the pantry as efficiently as I would like. Here are the dimensions of the pantry, as drawn by my KD:

Here is the drawing with the appliance garage in yellow on the lower right:

I have 60 inches of counterspace on the other side of the appliance garage, but cannot have the appliances on the far right side of the counter, as there are steps behind the wall that compromise the space.

Based on the dimensions drawn, 36" x 83 1/2" what would you recommend for shelves? If the appliance garage moved 12 inches to the right, and there was 17 1/2 inches available, instead of the 29 1/2" shown, would that make a significant difference in my ability to use the corner, or would it not matter?
