Recessed lighting for 7' ceiling

I've read most of the posts here and have visited a lighting store but am still lost when it comes to deciding on the right size and spacing of recessed lights in our house. The house has 7' ceilings throughout. We are gutting the kitchen and refinishing the basement - that's where the recessed lighting will go in first. Can someone guide me on 4" vs 5" vs 6" cans for that ceiling height and the proper distance for them in the kitchen vs basement? Any specific suggestions on choosing halogen fixtures for those sizes? I would be happy to use Cree led lights but am concerned about the cost if we need a lot of their LR4's for the best lighting setup.

General lighting use 6" with spacing of 6 feet on center max, 5" recessed would be 5 feet on center. These would be acceptable up to 9 foot ceilings.

4" recessed lighting is used mainly for spot lighting, wall washing etc...

Sorry to bring this up again after the very nice response from AZlighting. However, we just returned home from a visit to a local lighting store (that consistently wins 'Best of Boston') and the lighting designer there strongly discouraged 6" cans given the height of our ceilings.
The cost difference between the Cree LR6 and their 4" and 5" cans if very large and I would like to keep the number of cans to 6 or so (thus 6" would work better). Hoping someone out there with 7' ceilings can comment on having used these lights in that environment.
