Not sure if a can light over the fridge is a good idea - the light shining down on it will appear as a 'wall wash' effect and highlight the fridge - maybe something you won't like down the road.

Our fridge is adjacent to a 3 1/2' wide doorway with a 6" can light centered over the doorway (about 21" out from the fridge) and the fridge isn't highlighted.

Thanks Forumulaross. The light pretty much falls there in the normal layout, so it's just a matter of how far from the front surface of the fridge it should be mounted. The ceiling's open, so I can rig a light up there and see what works best. Just wondering what others have done in their kitchen.
