Ceiling lap marks

I'm having a problem painting ceilings. It all started about 4 months ago when I painted the downstairs bathroom ceiling. I used Benjamin Moore water based with a low luster finish. The problem was that the paint was drying on me WAY too quickly. I mean in a matter of SECONDS. I reload the roller, bring it back up to the ceiling and the edge where I left off is already dry to the touch. This resulted in major lap / roller marks. Tried rolling it in lines like a wall, then i tried doing the "W" pattern. All that got me was "W" shaped lines. I repainted it twice and still couldn't get it right. Then my dad tried it, twice, same thing. Went back to Benjamin Moore and complained, there was no way this was normal. I got a free gallon of oil based paint, which went on MUCH better. Took much longer to dry, much better to work with. Finally got that ceiling right.

Now I'm doing my upstairs bedrooms. Because of all the painting required, we had the painter come in for this job. I also switched to SICO (latex based, eggshell). The painter finished up on friday, the next day, early in the morning when the sun was coming in thru the windows, I stood outside one of the rooms and looked up at the ceiling and saw it loaded with lap marks! This drove me nuts, so yesterday I decided to try it myself. The paint went on much better than the Benjamin Moore latex, so I thought I'd managed to fix it, however this morning I checked and they're still there!

Am I doing something wrong here? Or am I just being anal? They're not extremely obvious, it's only under the right lighting that its visable... But how could this be normal?

Thanks,

Anthony.
