RECIPE: Kick It Up A Notch

This one sounded so good in the write-up. And we really enjoy calamari in most forms. So made it last night. Try it this way, if you want. But see my notes, first.

Stir-Fried Squid with Basil and Garlic

1 1/2 lb cleaned squid, bodies cut in 1/2 inch rings and tentacles halved lengthwise if large

1/2 cup (packed) basil leaves, coarsely chopped

2 tbls peanut oil

1 tbls minced garlic

1/8 to 1/4 tsp crushed red pepper

1 tsp salt

In a large bowl, comine the squid and basil.

Heat a wok or a heavy skillet over high heat until smoking, 4-5 minutes. Reduce the heat to moderate, add the oil and swirl the pan to coat. Add the garlic and stirfry until it begins to brown, about 15 secons. Increase the heat to high and add the squid-basil mixture and crushed red pepper. Stir-fry until the squid becomes opaque, about 1 minute. Continue cooking, stirring often, until tender, 2-3 minutes longer. Stir in the salt and serve.

Notes: Overall this needs kicking up, as it's very much on the bland side. Used only 1 lb of calamari, and the flavors still didn't come through.

I think upping the garlic (I would use a full head) and red pepper certainly would help. And maybe substitute oregano for the basil? All of which, of course, would make it a different recipe.

I've never before heard of pre-heating a wok that long. Not a good idea, IMO. Even without that incredible heat factor, 4 minutes cooking calamari is about 2 too many. Squid should follow the 2/20 rule: you cook it for two minutes or for 20 minutes and it is tender. Anything between those two and it's likely to be tough and rubbery.

But, at least this is one less clipping in the to-try folder.
