RECIPE: Nice For A Crowd

Here's another from my clippings file. This goes well at any gathering where finger food is on the menu:

WONTON CUPS WITH SOUTHWESTERN SALAD

Wonton wrappers

2 cups frozen corn, thawed

4 cups cooked black beans

2 cups thick salsa

6 scallions, sliced thin

sour cream

1 red bell pepper, diced

Sliced avocados

Preheat oven to 350. In muffin tin press a wonton wrapper in each cup, fluting edges so they fit well and look nice. Bake 5-6 minutes until lightly browned and crisp. Remove from oven. Cool completely.

In a bowl stir together the corn, beans, bell pepper, salsa and scallions.

To assemble: Heap salad in wonton cups. Garnish with a dollop of sour cream. Arrange avocado slices around cups.

Notes: That won ton in the muffin tin thing is a great trick. I usually make the whole package at one time. The cups keep well for at least a week in a zipper bag. Then you can vary the fillings to your hearts content.

Instead of decorating with avocado slices you can make an avocado cream and use that to dot the cups. Or do both, for that matter.

    Gardenlad, you are right. Wonton cups are great used this way. And there are so many options of what you can fill them with. I usually use mini muffin tins so that they are just bite size. I like them filled with

    and with crab meat and topped with salsa. My son would love your filling.

    I've made a very similar snack type thing for outdoor parties - the only difference is I put warm ground meat seasoned with chili powder, garlic etc (taco seasoning type spices) and shredded cheese in before the cold chopped stuff. Everyone really does love bite sized little snacks and these are great!

    Thanks for reposting the recipe - I think I will make some this weekend to cheer on the underdogs! (Go Dallas Go Giants!)

    Those look great, Ann. I'm not big on guacomole myself, but Friend Wife loves it. And anything with shrimp is a plus.

    Maybe I'll make a batch of those this weekend as a treat for her.

    So cute! Yum... So the wontons get crunchy, huh? Do I need to brush them with oil, or anything like that?

    No, Em, just put them in the muffin tins. Basically you are toasting them, and there's nothing to make them stick.

    You'll also get slightly differently configurations depending if you start with round won tons or square ones.

    I sometimes do a larger version, using tortillas. In that case you have to nuke them first, so that they're flexible, then fit them into an appropriately sized bowl. Great for taco salad and the like.

    These little wonton cups are so convenient for serving. Much nicer than having everyone spooning up for themselves from the same dish.

    Superbowl is coming up and rather spending a ton of money on wings for the big game try this recipe that's awesome.
    Ingredients:
    Frozen wings
    Franks Red Hot wing sauce
    Tobasco sauce
    Black Pepper
    Carrots
    Celery
    Ranch/Blue Cheese dressing

    Fry wings to desired crispiness.

    In a seperate bowl that has a lid pour 1/4 cup franks hot sauce a few drops of tobasco and some black pepper, not too much.

    Place wings in bowl, put lid on and shake.

    Serve awesome wings with carrots, celery and dressing.
