LOOKING for: 'More With Less' Menonite Cookbook

Does anyone have this cookbook? If so, there's a recipe in it for baked oatmeal that I'd love to have. I don't know if that's the actual recipe name or not.

There are several recipes for baked oatmeal on the web and I've tried a few, but am specifically interested in this one. It's delicious!

Can anyone help?

    You could ask at Recipezaar if nobody here has it. A couple people there have posted other recipes from that book.

    Susieque - I have the set of World Community Cookbooks .... I didn't find the Baked Oatmeal in "More-with-less", but in "Simply in Season", I hope it's the one you're looking for.

    Baked Oatmeal
    This recipe can be prepared quickly in the morning by mixing the dry ingredients and wet ingredients separately the night before. Combine and pop in the oven as soon as you get up. Leftovers keep well in the refrigerator and can be reheated in the microwave in individual bowls.

    2 cups/500 ml rolled oats
    1/3 cup/75 ml brown sugar
    1 tsp baking powder
    1/3 cup/75 ml raisins
    3 T chopped walnuts
    --Combine in a medium bowl.

    1 cup/250 ml milk
    1/2 cup/125 ml applesauce
    2 T oil
    1 egg, beaten
    --Combine in a separate bowl. Add to oat mixture; stir well. Pour into a greased 8x8-inch/2L baking pan. Bake in preheated oven at 350F/180C for 25 minutes. Serve warm with milk.

    I had that cookbook and used it all the time. Now I can't seem to find it, darn it! What comes from moving way to often. I hope I can find it.

    News flash! Just after I typed the above I had a brain spasm and remembered where it was! Moving a lot and old age, not a good combination!

    Do you want a granola recipe? Because there are about eight in there. As for slow cooked oatmeal, I only found one "Apple Oatmeal."

    1 cup rolled oats
    2 cups cold water
    1/2 tsp. salt

    Cook ten minutes on low heat.
    Add:
    2 cups chopped apples
    dash of nutmeg

    Cook 5 minutes more, or until apples are done to desired consistency. Serve with milk or yogurt and honey, brown sugar or connamon sugar.
    Can use raisins or dates in place of the apples.

    One of my favorite breakfasts!

    And thanks, especially, lpinkmountain, for checking the cookbook. Gee ... I was TOLD that that cookbook is where that recipe came from, but perhaps the person that told me was wrong (I had the baked oatmeal and that's where I was told the recipe was).

    It definitely wasn't a granola. But not the slow-cooked oatmeal, either.

    So - I guess my source was wrong. I do appreciate the replies!

    Suzieque - Simply in Season is a sister book to More-with-less in the same set...I think it might be easy to get the titles mixed up. That's the only recipe for Baked Oatmeal (it's not slow cooked) in any of them :)

    Cindy, your recipe sounds awesome! I wonder if rolled oats are close enough to steel cut which is what I eat in the morning with a little milled flax seed? I would love to be able to just put it in the toaster oven and not have to keep coming back and stirring. Also, what do you think about omiting the brown sugar and oil? Maybe add a little real maple syrup? Any ideas?

    The recipe that I posted above is the one from "Simply in Season". Both "Simply in Season" and "More-for-Less" are part of the World Community Cookbooks that I have.....I guess I didn't explain very clearly, sorry about that :)

    Thank you Cindy - that may just be the one, after all. I didn't get any applesauce taste in the one I had, but you never know. And there definitely weren't walnuts in it, but perhaps they were left out due to potential allergies. I'll try it, for sure.
