RECIPE: Ginger's Carrots Piquant

Ginger, I've had this recipe saved for a long while.....just got around to it tonight! Its delicious and I thank you for posting it. Actually, I made about 1/3 of the recipe so I didn't really measure very much, but I was licking the bowl and the spoon from the sauce and when we ate the carrots there were no leftovers at all.....and I made a pretty large portion for 2 of us..........THANKS.

CARROTS PIQUANT (serves 6)

1 1/2 lbs carrots

1/4 cup butter, melted

2 TBL brown sugar

2 drops Tabasco

1/2 tsp salt

Dash of pepper

1 TBL Dijon mustard

Peel carrots & cut into 1/4" slices. Arrange carrots in a buttered 10-6" baking dish.

In a small bowl, combine butter, brown sugar, Tabasco, salt & pepper. Pour over carrots.

Bake covered in a preheated 350° for 50-60 minutes.

Just before serving stir in the mustard.~~
