Just put the leftovers through a meat grinder, perhaps add a little fresh onion and fry!

My mom made this when I was younger and I made it for the first time last month for my kids. It may be too simple for what you're looking for but here it is...
1 lb gr. beef
diced potatoes (uncooked)
couple cups of beef broth (enough to just cover beef and potatoes)
brown the beef, add potatoes and broth, bring to boil, reduce to simmer and add salt and pepper to taste.

Anyone who grew up during "The Great Depression Days" (dating myself, again!) knew about Red Flannel Hash. A tasty way to recycle leftovers from the dinner table.

Q What is red flannel hash?
A In old-time New England, red flannel hash was any combination of hash to which red beets were added, the standard hash being made of corned beef, onions, turnips, potatoes, and seasonings. Without beets, it was white flannel hash. Don't sneak in any orts (scraps meant for the chickens or the compost) if you are proud of your hash.
