Banana Bread needs ripe banans for the flavor. Maybe do something that "carmelizes" the sugars in the bananas, like: Bananas Foster; or Banana Pancakes; sauted bananas over ice cream; some sort of banana sauce for cake.

Can they be thawed and allowed to continue ripening?

Well, I'm sure late to this party. However, I would have halved them, stuck sticks in and dunked them into chocolate coating, then just put them into the freezer. Chocolate covered frozen bananas! The fact that they are frozen would then be no problem.
