RECIPE: How to make 'dry' sausage

20 years ago

My uncle was a butcher and made the very best of what we called "dry Sausage'. They were in links and he would hang them up to dry. When he died, so did his recipe and I would really like to make some. Even his wife didn't have the recipe.
