LOOKING for: Ice Cream Cake

Many years ago I had a recipe for an ice cream cake which everyone loved and I lost the recipe. I can't remember much about it except it was made in a sheet cake pan, had a layer of homemade caremel about half way through it and I don't remember the frosting. There was nothing chocolate I don't believe. Anyone have a recipe similar to this?

    Beverly, I know this isn't what you're looking for, but this is a family favorite of my friend Kay and you can put it in your ice cream cake files :-)

    KAY'S ICE CREAM CAKE

    Mix together:
    60 Ritz crackers (2 packs) Crushed
    1 stick of margarine, melted
    (Save a little for the top)
    Pat into a 13 inch by 9 inch pan.

    2 packs coconut cream instant pudding.
    1 gal vanilla ice cream softened and 3/4 cup milk

    Beat together and pour into crust in pan and let set until firm.

    Cool Whip:
    Spread cool whip on top and top with additional crumbled Ritz crackers

    This is a very good recipe. Whenever I serve this, I am always asked the recipe.

    Frozen Ice Cream Delight

    2-1/2 cups cream-filled chocolate cookie crumbs, divided
    1/2 cup butter or margarine, melted
    1/2 cup sugar
    1/2 gallon chocolate,coffee, or vanilla ice cream, softened.
    1-1/2 cups salted peanuts
    1 carton (8 0zs.) frozen whipped topping, thawed
    Chocolate Sauce:
    2 cups confectioner's sugar
    2/3 cup semisweet chocolate chips
    1 can (12 oz.) evaporated milk
    1/2 cup butter or margarine
    1 teaspoon vanilla extract

    Combine 2 cups cookie crumbs with butter and sugar. Press into the bottom of a 13x9x2 pan. Freeze for 15 minutes. Spread ice cream over crumbs; freeze until firm, about 3 hours. Meanwhile, combine first four sauce ingredients in a saucepan; bring to a boil. Boil for 8 minutes. Remove from heat and stir in vanilla; allow to cool to room temperature. Spoon sauce over ice cream; sprinkle with nuts. Freeze until firm. Spread whipped topping over nuts and sprinkle with remaining cookie crumbs. Freeze at least 3 hours before serving.

    I let it set out a while before serving as it's hard to cut when frozen. The sauce is good to use with other desserts too. I always chop the peanuts a little also.

    Forgot to say that I use vanilla ice cream with this as it has the chocolate crust and the chocolate sauce in it.

    I make a mud pie which everyone seems to like. You can do it from scratch or cheat as you see fit.
    Crust- crushed oreo cookies to fit the pan - or store bought oreo crust
    fill with any flavor ice cream. let harden in freezer and then frost with chocolate frosting- homemade or can
    top with whipped cream
    add shaved chocolate.
    Eat!

    I tried this one and it was good.
    2 boxes of ice cream sandwiches (I will buy more next time, I was one sandwich short)
    1 jar of caramel ice cream topping
    1 jar of fudge ice cream topping
    pecan pieces
    12 oz cool whip defrosted

    Put one layer of sandwiches in 9x13 dish. Put the caramel on top. Top with 1/2 the cool whip. Sprinkle with nuts.

    Put second layer of sandwiches on (I pressed them down a little). Top with rest of cool whip. Sprinkle with nuts. Cover and freeze (I let it freeze over night, but the recipe says 4 hours.)

    Pull out of freezer 15 min or so before you need it. Warm some of the fudge topping in microwave and drizzle over top. Cut into squares.
