LOOKING for: butterscotch pie filling

I would like to make a butterscotch pie for mother's day and top it with the meringue recipe that is in this month's Cook's Country. Does anyone have a good butterscotch filling recipe?

    Gail, here is the filling I make and you can easily use a meringue topping for it.

    Butterscotch Pie

    1 cup packed brown sugar
    1/4 cup cornstarch
    1/2 teaspoon salt
    3 cups milk
    4 egg yolks, slightly beaten
    2 tablespoons butter; softened
    1 teaspoon vanilla
    9-inch baked pastry shell

    Mix sugar, cornstarch and salt in 1 1/2 quart saucepan. Stir in milk gradually. Cook over medium heat; stirring until thickens and boils. Boil one minute. Stir at least half of the hot mixture gradually into egg yolks. Blend into hot mixture in saucepan. Boil and stir one minute. Remove from heat; stir in butter and vanilla. Pour into pie shell; cover with plastic wrap. Refrigerate at least 2 hours. Top with whipped cream

    This is my Grandmother's recipe...makes 2 pies...

    Butterscotch Pie (2)
    2 cups light brown sugar (packed)
    2 cups dark brown sugar (packed)
    6 egg yolks (reserve whites for meringue)
    6 TBS margarine
    8 TBS (1/2 cup) flour
    2 TBS corn starch
    4 cups milk

    Mix dry ingredients well; add liquids.
    Add other ingredients and cook until thick, stirring constantly.

    Add 2 tsp vanilla and pour into baked shells.

    I never make meringue; I just top it with whipped topping...

    This is one I make all the time. I looove butterscotch pie, esp. when it is warm!

    Butterscotch Pie
    1 cup packed light brown sugar
    1/3 cup all purpose flour
    1/4 tsp. salt
    1 can (12 oz) evaporated milk
    Water
    Yolks from 4 large eggs
    1/4 cup unsalted butter
    1 teaspoon vanilla extract
    Mix brown sugar , flour, and salt in medium heat proof bowl.
    Pour evap. milk into a 2 cup glass measure and add enough water to measure 2 cups. Whisk egg yolks and 1/2 cup of the diluted milk in a small bowl until blended. Whisk yolk mixture into sugar mixture until well blended, then whisk in remaining milk. Place bowl over pan of simmering water and cook, whisking mixture constantly 12-15 min. until very thick.Remove from heat, add butter and vanilla and whisk until butter melts. Pour into baked pie crust and cover surface with plastic wrap. Top with meringue and bake until light brown.

    I put the ingredients in a pan directly on the stove using low heat, whisking constantly, and it always turns out good.

    You're so welcome. I have not made that in years so it's nice to hear that it's still good! Sometimes the old recipes don't taste as good to me now as they did then:)

    We haven't had a butterscotch pie in years!

    This is really giving me the inspiration to make a a butterscotch pie!
