RECIPE: aaaahhhhh!!!!!!

I'm so excited! I cannot believe I have found a message board with people that love great food! My dh and I are avid amateur chefs and our favorite thing to do is buy the ingredients for a new, fun recipe, open a bottle of wine, and have a great evening cooking! We have YET to find friends with our similar interests so finding all of you is the next best thing! Since I'm here on the recipe board, I'll share a really quick, easy one for Lime Chicken Tacos that we make often. Our very favorite genre of food is anything Italian but then our next favorite is Mexican! Looking forward to many great recipes and discussions ahead!

Lime Chicken Soft Tacos

1 ½ lbs chicken thighs, boiled, skinned, de-boned and shredded

1/8 c red wine vinegar

Juice of one lime

1 tsp sugar

½ tsp salt

½ tsp blk pepper

½ tsp cumin

dash cayenne ( or as much as you like!)

2 green onions, chopped

2 cloves garlic, minced

1 tsp dried oregano

10 (6 in) flour tortillas

1 tomato, diced

shredded lettuce

shredded Monterey Jack cheese (or your favorite kind)

salsa

Directions:

-Place chicken and first 10 ingredients in large, deep skillet over medium heat and simmer about 10 minutes. Turn off heat and cover to keep warm.

- Heat an iron skillet over med. heat and warm tortillas one at a time.

-Serve lime chicken mixture in warm tortillas topped with tomato, lettuce, cheese and salsa.
