LOOKING for: Chicken Salad for Sandwiches

Yesterday I bought the most delicous bread at Costco. It is called Innkeeper's Bed & Breakfast Mango Peach Cobbler Bread. After having it toasted for breakfast this morning, my husband and I thought it was delicious, and we thought it would be really good with chicken salad as a sandwich.

The only recipe I have for chicken salad is one that is served on a bed or greens. It is chunky and has grapes and wouldn't work for a sandwich.

Can someone share a recipe that would be a good sandwich kind of chicken salad?

    I would think the salad you serve on a bed of greens would also be good for a sandwich.

    I never really measure but mine mainly has...
    cut up chicken, celery, onions, mayo, salt, pepper, maybe a little lemon juice, garlic powder, some grapes or sometimes instead of grapes some apples or nuts.

    Poach several chicken breasts
    Shred
    Finely chopped celery
    Hellmans mayo, just enough to hold the meat together
    S&P to taste

    Glenda, I have the chicken poached and chilled, ready to process into whatever texture. And, I picked-up more celery today at the market, along with some water chestnuts for added crunch.

    I think I am going to do your simple version, and add the water chestnuts, and a little touch of some sugar. I also picked-up some butter lettuce and some nice red leaf lettuce to make these sandwiches.

    Carla, my recipe for chicken salad is a chunky one. The grapes are halved and it has almonds in it that are slivered. It would be too chunky and make a huge mess and not work to make a sandwich with the tender mango peach bread, even if the bread is toasted to give it more stability for a sandwich.
    I was wondering if the bread would fight or overpower the flavor of a little curry. I think it might.

    To serve the brunch/lunch tomorrow, I am using this sandwich idea, then some wonderful black raspberries, some blueberries, and some red grapes that I am going to mix with some honey dew balls. And, I am doing a chunky avocado and tomato salsa on a small bed of colored corn tortilla strips. I thought a fizzy limeade would be a nice touch too.

    Until breakfast this morning, I was still clueless what to serve. This bread is really wonderful and will give a plain lunch a special touch.

    The lunch yesterday with the chicken salad went over very well!

    At the last minute with tastings, I added about a tablespoon of finely minced red onion, and I added about half a cup of finely chopped dried apricots and about a half of a cup of thin sliced almonds. I had used 4 large chicken breasts. I food processed some celery until it was like a pulp to moisten the salad so it wasn't too overpowering with the mayo, and that was a very flavorful choice, and then there was about a good half cup of finely chopped celery too. And, the water chestnuts were sliced and cut into fourths.

    I also added some Twinings Four Red Fruit iced tea and served it with the fresh squeezed limeade. I mixed the two together and it was outstanding and I will do that again.

    The fruit cups were terrific as the blackberries were so plump and juicy. I did a light sprinkle of some white reisling wine and that really was a nice touch for flavor too.

    I will be making this kind of chicken salad more often. I like the chunky version for salads, but this was fantastic for sandwiches. I think it would be just as good, if not better, using turkey instead of chicken!

    I had chicken salad at Jason's Deli yesterday, It was excellent!

    Shredded chicken, with pineapple tidbits and almonds, and mayo.

    I think the secret of good chicken salad sandwiches is finely chopped chicken....a little finely chopped onion celery, mayo and lots of lemon!..Lots!

    My very favorite is a chicken waldorf. It is chunky, but it heavenly served on a croissant. It is mayo with a little orange juice or lemon juice and sugar (optional)mixed with chopped chicken, chopped apples, chopped walnuts, and sweet onions finely chopped are optional. The only spice I use is some salt and a little (tiny amount) of nutmeg. We love this.

    Last week at Costco we accidently bought a cellophane wrapped bunch of canned chicken breast. I think my husband might have stuck in it the cart thinking it was the tuna, and I didn't realize I had it until we got home and unloaded.

    So, I had six tins of canned chicken breast.

    This afternoon, I used four of the six cans to make a chicken salad from this site. I tried mixing in the almonds and pineapple like what glenda had. I also used a little fine chopped red onion and celery. It was pretty plain, so I squeezed in some lemon like Linda said, and finally added a little of the pineapple juice to get the right consistency.

    Honest to God! It was pretty darn good! I served it in pita pockets with greens and chopped up grape tomatoes like a chunky relish.

    Thanks again to everyone for their help the first time around! I am becoming a chicken salad maven, even with funky canned chicken breasts!!
