Lettuce, a bit of skinny sliced sweet onion and a vinaigrette.
1 T dijon mustard
1 T honey
1 tsp finely chopped garlic
1 tsp crushed dried oregano
1/4 cup cider vinegar
1 T balsamic vinegar
1/2 cup Extra Virgin Olive Oil
Whisk all together, starting with the mustard and honey and adding the other ingredients.
Place broken up lettuce on salad plate, add skinny onion slices and artichoke hearts. Drizzle all with dressing

An old favorite in St. Louis is a Rich & Charlie's salad. Not really a recipe but just combine Romaine & Iceberg, chop up the artichoke recipes, some drained chopped pimento, olive oil & a little red wine vinegar & add lots of grated Parmesan & toss the heck out of it with some salt & pepper.

Oops, I forgot an important ingredient - sliced red onion.
