About how long ago did the recipe appear in that little book? I've got a stack of them from a few years ago and I can check through them when I get home from work this evening if they are in the ballpark timewise.

It must have been about 2-3 years ago. I remember it was one that did not have a picture for it, just the recipe within the pages. Thanks for checking your stack of books.

Well, I've gone through all the little books I could find and this is the closest recipe to what you described. I doubt that it's the same (no squash and you would have to substitute parsnips for the yams) but maybe it will tide you over til you find the real thing.

(From a Pillsbury "Casseroles" booklet published in 1998)

Harvest Pork, Sweet Potatoes and Rice
1 lb boneless pork loin, cut into 1/2 to 1 inch pieces
1 medium red onion, cut into thin wedges (1 cup)
2 sweet potatoes, peeled and cubed (3 cups)
1 1/2 cups frozen cut green beans
1 cup uncooked regular long-grain white rice
3 tsp curry powder
1/2 tsp salt
1/4 tsp ginger
2 cups apple juice
2 T maple syrup

Heat oven to 350 degrees. Spray 13x9-inch (3 quart) baking dish with nonstick cooking spray.

Spray large nonstick skillet with cooking spray. Add pork and onion to skillet; cook over medium-high heat for 5 minutes or until pork is no longer pink, stirring occasionally.

In sprayed baking dish, combine pork mixture and all remaining ingredients; mix well. Cover with foil.

Bake at 350 for 1 hour or until rice is tender.
