What do you have to make it out of? Ham? leftover beef? Shrimp?
I made something not too long ago out of leftover pot roast. I chopped it fine in the food processor....added somr grated onion and sweet pickle relish, a dash of worchestershire and anough mayo to make it spredable.
Another is roasted red pepper mashed up with a crushed clove of garlic...but that's more cocktail-ish.
Ham salad? Chopped ham...best with honey baked ham...some onion, dijon mustard and enough mayo to hold it together.

Here's a recipe passed down from my grandmother.

a can of spam
2 hard cooked eggs
small onion
green pepper
and mayonaise

I use a box grater to grate the spam, eggs, onion and the
green pepper.

Add mayo to consistance you like.

My kids love this on bread, crackers, and even just by the spoonful.

I should have been more specific Linda. I'm having a chicken salad plate so I'm looking for something without meat. I do have some roasted red pepper and some herbs on hand.

How about an olive tapanade? Indeed, you could make two: a green one and a black one, and have a little color contrast.
