I buy a jar of sofrito in the ethnic section of my local Publix and put that on top of my meat loaf sometimes. It's yummo!

I make a Mexican Hot Meatloaf like a butcher in NY instructed me on. I use roasted peppers, tomato sauce and Tabasco.
I think we have some pretty good recipes here on this forum too.

Sounds good to me.... I'm a meatloaf lover also.

Every once in a while I like to roll my meatloaf mixture out and cover with pizza sauce and some mozzerella then roll it up and bake. The slices make nice pinwheels along with having great flavor.

Chris - sofrito is a Spanish tomato sauce with peppers & onions and spices in it. I usually find it with the Mexican foods in the Ethnic section of my local grocery store.

I'll bet pepper jack cheese in the middle of a Mexican meatloaf would be good!!

I like pepper jack with anything. Makes a great cheeseburger, too.
If you want to make your own sofrito, try this:
SOFRITO (about 1 1/2 cups)
1/3 cup minced smoked ham
1/3 cup olive oil
6 garlic cloves, minced
1 small green bell pepper, seeded & minced
3 sweet chili peppers, seeded & minced
1 small onion, minced
2 tsp chopped fresh oregano
2 tsp chopped fresh cilantro
2 medium tomatoes, chopped
1 TBL tomato paste
Salt & pepper to taste

Saute the ham, garlic, peppers & onion in the olive oil for 3 minutes. Reduce heat & add remaining ingredients, cooking gently for 20 minutes.~~Taste of the Caribbean
Use it on fish, chicken & rice dishes. OK for a couple days in the refrigerator in a glass jar.

I like to add some canned black beans and mexicalli corn to the meatloaf mix along with soem ground cumin.

thanks for all the comebacks its great to share.. you can try rolling your meat loaf mixins in a toco shell or tortillos flat. then back it..or after you back it.... NOW READ This...
