RECIPE: Lemon Thyme Bread with photo

I was looking through recipes and came across this one that sounded interesting and would use up some of the lemon balm that so wants to take over everything! It is delicious!

Lemon Thyme Bread

2 cups all-purpose flour

1 1/2 teaspoons baking powder

1/4 teaspoon freshly ground nutmeg

3/4 cup skim milk (I used 2% as that is what was in the house)

2 tablespoons chopped fresh lemon balm

2 tablespoons chopped fresh thyme (I used lemon thyme)

1/2 cup butter, softened

1 cup sugar

2 large eggs

1 tablespoon fresh lemon zest

Mix flour, baking powder and nutmeg.

Combine milk, lemon balm, and thyme in saucepan, bring to a boil, and remove from heat. Let stand, covered, until cool. Preheat oven to 325 degrees.

Beat butter until creamy. Add sugar gradually, beating constantly until light and fluffy. Add eggs, one at a time, beating well after each. Add flour mixture alternately with milk mixture, beginning and ending with flour.

Stir in lemon zest.

Pour into greased and floured 5"x9" loaf pan. Bake 50 minutes or until tests done.

Cool in pan 10 minutes.

Glaze

1/2 cup confectioners' sugar

2 tablespoons fresh lemon juice

Combine the confectioners' sugar and lemon juice and glaze the cake when partially cooled.
