LOOKING for: Sooooooo good, don't have a recipe!!

While in Alaska, recently, one of my excursions was in Skagway, for a salmon bake, and an old Goldmine.

We feasted first, then enjoyed the Goldmine show. Which I panned for gold.

Outdoor smoked salmon!! AWESOME

OKAY, what I'm looking for!!

Along with the was cole slaw.

It had dried cranberries, non-toasted almond slivers, mayonnaise, lots of pepper.

Anyone got a recipe for this?

It was OUTSTANDING!!!!

    Can you tell us more Glenda? Was it regular or red cabbage? Did it have onions?

    It was regular cabbage, shredded, not chopped, but not finely shredded. It had some onion in it.

    Have done a search, and can't find one.

    Glenda we went to the same place I bet. Did they have a giant dog there that they showed off? I dont remember the slaw but the salmon was good and the squirrels came out when dessert was served and got well fed by all the tourists. Alaska was my favorite vacation as an adult and we are going back next year.

    Sounds like you ate what a real chef prepared Glenda. I've been unable to find a recipe like it. I found some on the web using red cabbage and I'm sure you saw those too.

    The salmon was the best I had on the entire cruise. You remember the slaw? I thought it was outstanding.

    Beverly, maybe I'll just try and improvise. Will let you know how it comes out.

    LOL, thats the dawg. That pic doesnt do him justice, he was HUGE. For the life of me I can't remember the slaw but it was four years ago when we went. I'm not partial to cruise food so I tend to remember meals eaten on shore. I remember that as being a good one but the details have escaped my 50 year old memory.

    Glenda, I'll check some of the "Alaska" cookbooks for it. There are a few with restaurant and roadhouse recipes.

    Have no idea about the coleslaw - but I was in Skagway, however I ate halibut instead of salmon and dammit, I must have seen that dog's mama in 1988!

    This is a kind of creepy dejavu - just an hour and a half ago Ken and I were reliving our Alaska trip at the dinner table, very funny for me to read this thread right now!

    You will laugh at this one. I was a home economics teacher for several years and enjoy improvising and creating new and exciting recipes for my husband and family and friends too. I make my own salad dressings, how dare one buy in a jar. The BEST cole slaw in the world is as follows:

    Take one package of McCormick Produce Partners Super Slaw Mix, comes in one of those metallic flat packages, 1.1 oz, 31gr net weight. This is the best basic starter I have ever used. It is not worth making up a recipe from scratch. BUT this is how I change it to be "my own". I use sour cream instead of mayo, I use lemon juice (fresh preferably, but the bottled will be okay) and I use Rice Vinegar instead of white vinegar. I also go light on the sugar.

    Then I use combinations, red cabbage, napa, slivered almonds, yellow raisons (soften them in hot water for a few minutes, makes all the difference in the world), sometimes I add pineapple tidbits, bits of diced cuke, cranberries work instead of the raisons, carrot shredded, and GREEN onion tops, not the bottom.

    MY DH and I do not salt our food, instead we use Lovage to seasoning and lots of ground pepper. Make it no less than one hour ahead, preferably the day before.

    I take this cole slaw to potlucks and people scrap the bottom of the bowl.

    Make it your own by changing it every time you make it. That is what is so much fun. My Father was a cole slaw freek. He judged a restaurant by their cole slaw, if he liked it he went back.

    Sorry Glenda. I stood in a bookstore in Anchorage and looked through every book in the Alaska cookbook section, but didn't find any coleslaw recipe with cranberries or any coleslaw recipes from Skagway.

    Karla is on the left. She lives in Waila, about 40 miles out of Anchorage.

    We had reindeer hot dogs for lunch and smoked salmon chowder.

    Why is it when I think of Alaska I think everyone should be in big winter coats? So when I scrolled down I was pleasantly surprised to see the short sleeves. lol

    Ev, today the weather in Anchorage was a high of 67 and a low of 54. When I was there in 1988 the first 2 weeks of September, the weather was in the 60's and 70's most of the time, but it did get warmer some days and the sun was usually shining, although we did learn that there is usually more rain, but we got lucky in that respect. I never needed more than a sweatshirt or a light sweater.

    I love seeing Garden Webbers/ THS members making it up here to Alaska!
    We definitely had a hot summer this year - even those of us down in the rainy panhandle!
