RECIPE: peach pound cake

Saunders Brothers seemed to be the only place to buy peaches in any quantity in central VA, so we made a day drip to Nelson Co.

All the peaches were BEAUTIFUL and large, and they were giving away a POUND CAKE RECIPE* with purchase. All the way home I imagined how wonderful the cake would smell baking and how good it would taste.

But my imagining was better than the real thing. The peaches weren't really ready to eat, and they weren't the intensely sweet kind anyway, with flesh more white than yellow/orange.

I had some nectarines that wouldn't last another day, so I used 3 of those and one of the peaches. Against my better judgement, I used all 3 cups of sugar called for. I had no sour cream and only strawberry yogurt, which I used.

Anyway, the result was disappointing; I wanted to try again w/ RIPE peaches, sour cream, and 2 c. of sugar, not three. But the second cake wasn't even as good as the first.

Will someone share a favorite peach cake or pie recipe? Thanks!

*PEACH POUND CAKE

1 c. butter or margarine, softened

3 c. all-purpose flour

3 c. sugar*

6 eggs, room temp

1 t. vanilla

½ t. almond extract

½ c. sour cream or yogurt [vanilla or peach]

2 c. chopped peaches

Preheat oven to 350; grease and flour 10" tube or bundt pan.

In lg. mixing bowl, cream butter+sugar til light+fluffy.

Add eggs one at a time, beating well after each.

Stir in extracts.

In sm. bowl, combine dry stuff.

Add to creamed stuff.

Fold in s. cream or yogurt + peaches.

Pour batter into prepared pan.

Bake 75-85 min or do the toothpick trick.
