LOOKING for: Cukes

Hi! I'm looking for a recipe for a cucumber salad. I have a TON of cukes and don't need to make pickles. I'm bringing a dish to pass to a party for 30, outdoors. Something simple, like maybe with a vinigrette dressing...

    I just slice the cukes.....slice some onions....put into a shallow dish....salt lightly and papper. add a sprinkle of sugar and a deizzle of vinegar.

    This is a good one & easy too:
    SWEDISH CUCUMBER SALAD (serves 6)
    4 cucumbers (about 1 3/4 lbs)
    6 TBL white vinegar
    6 TBL sugar
    3/4 cup water
    Salt & pepper to taste
    1/4 cup chopped parsley
    1 TBL finely chopped dill

    Peel the cucumbers & cut in 1/2 lengthwise. Scrape out the seeds. Cut the halves crosswise into thin slices. There should be about 5 cups. Put the slices in a bowl.
    Blend the vinegar, sugar, water, salt & pepper in a small saucepan & bring to the simmer. Stir until the sugar dissolves. Pour the liquid over the cucumbers. Let stand until cool. Chill.
    Sprinkle w/parsley & dill & toss to blend.~~Craig Claibrone

    Here's a tried and true Thai cucmber salad. It's sweet and sour, hot and crunchy but cool at the same time! I don't see why you couldn't increase the proportions as needed....

    THAI CUCUMBER SALAD (3 servings)

    2 shallots
    3 salad cucumbers
    1-2 red Thai chilis (see link)
    1/3 cup white vinegar
    2 teaspoons sugar
    1/2 teaspoon salt

    Cut shallots and chilis into thin slices. Peel cucumbers and cut in half lengthwise, remove seeds if large, then cut across into thin slices. Place the cucumber, shallot and chili slices in serving bowl.

    Heat the vinegar, sugar and salt - stirring constantly until sugar has dissolved. When mixture boils, remove from the heat. After mixture has cooled, add to the bowl and mix. Ready to serve!

    Here's another I like:

    CUCUMBER SALAD (makes about 7 cups)

    4 cucumbers (about 3/4 lb each)
    5 tablespoons sugar
    1 tablespoon plus 1 teaspoon salt

    5 tablespoons sugar
    1/4 cup plus 2 tablespoons cider vinegar
    3 medium white onions (about 1 pound), thinly sliced
    Freshly ground pepper

    Peel cucumbers with vegetable peeler, leaving 6 thin evenly spaced length-wise strips of rind. Slice cucumbers into 1/16th inch-thick rounds. Set in colander. Toss with salt. Cover with towel. Weight with heavy bowl for 1 hour.

    Pat cucumbers dry. Dissolve sugar in vinegar in large bowl. Add cucumbers and onions. Season with pepper; toss well. Refrigerate. (This salad has a crisp, fresh character when served the day it is made. For a more assertive flavor, marinate it in the refrigerator for up to a week).

    Sorry, there are only 5 tablespoons of sugar in the 2nd recipe!! I typed it in twice.

    Seagrass, just served your Thai Cucumber Salad for dinner this evening. We REALLY liked it, and I used my Thai peppers that I have growing in my garden. Thanks for posting the recipe.

    I'm glad you enjoyed it. I'm going to take the recipe along with me when I go home to Ohio tomorrow and make it for my family there. I think it will be a hit with them, too.
