Also kosher for passover....but that's a long time away!
I roll mine in sugar before putting on the baking sheet.

How simple can you get!

Here is our family favorite...

Preheat oven to 375 degrees

1 C. shortening
1 C. sugar
1 C. brown sugar
1 tsp. vanilla
2 eggs, beaten
1 C. peanut butter
3 C. flour
2 tsp. baking soda
dash of salt

Cream shortening, sugars and vanilla together. Add eggs, beat thoroughly. Stir in peanut butter. Add dry ingredients. Roll into 1" balls. Place unto ungreased cookine sheets and flatten with the back of a fork dipped in flour to make a cross hatch pattern. Bake at 375 degreees for 10 minutes. Makes approx 8 dozen cookies.

I can vouch for them, I've made them many times. I add 1 tsp. vanilla, and someone else posted the same recipe in one of these forums but hers includes a little baking soda which makes the cookies rise a little and have a crackled top. I don't remember how much BS... a search of one of the recipe forums on this site will turn it up. And, like Linda, I roll ours in sugar before baking. Very delicious.... very peanut buttery!

Have you tried the flourless peanut-butter cookies?

2 c. peanut butter, chunky or creamy
2 eggs
2 c. granulated sugar
1 tsp. baking soda

That's it! Chill for awhile if the dough is too sticky. Then roll into balls and mash down w/ fork dipped in sugar. Bake at 350 for 6 minutes, bang cookie sheet on rack, then bake 2-4 minutes more.
