RECIPE: ginger's breakfast casserole was a hit this am!

i had tucked this recipe away some time ago and when cleaning up the kitchen last night, discovered half of a very nice baguette that was really drying out. so in place of the english muffins, i decided to try it out. i used fake eggs and cut back on the cheese and it came out great! course, not sure why i bothered modifying things for ted--he had a large serving first thing this morning and by noon, he had helped himself to just about half of it...

COMPANY BRUNCH (serves 8)

5 sourdough English muffins, split (or regular ones)

1 cup shredded Cheddar

1 cup shredded Swiss cheese

1 lb breakfast sausage, cooked, drained, crumbled (or crisp bacon or chopped ham)

12 eggs, lightly beaten

2 cups milk

1/3 cup chopped parsley

1/3 cup chopped green onions with tops

1 cup sliced fresh mushrooms

Arrange the muffins in a buttered 9x13" baking dish. Sprinkle with the Cheddar & Swiss cheese & sausage. Beat the eggs, milk, parsley & green onions in a bowl until mixed. Pour over the prepared layers. Chill, covered with foil for 8-10 hours. Sprinkle w/the mushrooms. Bake in a preheated 350Â° oven for 50 minutes or until set. Let stand 10 minutes before serving.~~From Texas Ties

Glad to know it works with variations, San. Thanks for the info about the fake eggs. I always wondered if they'd be OK.

well--i'm sure it would have to be somewhat different using whole eggs but based on the size dish i was using (2.8 L), it held about 8 slices of the baguette and i used the equivalent of 6 eggs and stirred in 1 c of milk. at the stated temp, it took about an hour to cook and "poofed" right up over the top edge before it fell a bit while cooling. 'tis history already--ted finished the last of it this morning :)

I make just about the same breakfast casserole, except instead of mushrooms I use green chiles and serve it with salsa.

Ginger, I will try yours with mushrooms, sure sounds good.

I think I've already got this recipe saved from a long time ago and I need a breakfast dish for 'girls weekend' in October!

Ginger, Do you toast the English muffins first? Is that a dumb question?

I do this same recipe but layer bottom with croutons!! Also excellent.

You can add a can of mushroom soup mixed with milk and pour on top when ready to bake. Everyone loves this!!

hmmm...now that I have green chiles, and a freezer bag of bagels, it sounds like a meal for next weekend! Thanks for the reminder.
