RECIPE: Lemon Cake

About 40 years ago, my mother used to make a lemon sheet cake -- when it was still warm, she used a toothpick to poke holes in it and poured on some type of hot lemon glaze that kind of crystalized on the top. I think it used Jello -- but I don't know if it was in the cake or the glaze (I was thinking it was in the glaze). I've looked through all her recipes and can't find it -- I wish I had asked her when she was still with us :(

Any ideas?

    Lemon sheet cake with lemon glaze
    --------------------------------------------------------------------------------

    INGREDIENTS:
    1 (18.25 ounce) package yellow cake mix
    1 (3.4 ounce) package instant lemon pudding mix
    3/4 cup water
    1/2 cup vegetable oil
    4 eggs
    1/3 cup lemon juice
    2 cups confectioners' sugar

    DIRECTIONS:
    Preheat oven to 350 degrees F (175 degrees C).Grease and flour a 9x13 inch pan.
    In a large bowl, stir together the cake mix and instant pudding. Add the water, oil and eggs, mix until smooth and well blended. Spread batter evenly into the prepared pan.
    Bake for 40 to45 minutes in the preheated oven, until a toothpick inserted comes out clean. While the cake is still hot, poke holes in the top with a fork. In a small bowl, mix together the lemon juice and confectioners sugar until smooth. Pour over hot cake.

    The recipe I remember making way back then was:

    Lemon Poke Cake

    1 baked white cake in 9 x 13 pan

    1 cup boiling water
    1 small pkg (4 serving size) lemon Jello
    1 small pkg Jello instant lemon pudding mix
    1 pint whipping cream

    Mix boiling water water and lemon JELL-O until dissolved. Poke holes at 1/2" intervals all over cake with long tined fork; slowly pour lemon JELL-O over cake so it seeps into holes. Refrigerate for at least 3 hours.

    Mix JELL-O instant lemon pudding with whipping cream with a power mixer until thick and fluffy; Spread over cake. Refrigerate at least one hour or until ready to serve.

    Then there is the:

    Holiday Poke Cake

    2 baked 8 or 9 " round white cakes, cooled completely
    2 cups boiling water
    1 pkg. (4-serving size) any flavor of red JELL-O
    1 pkg. (4 serving size) lime flavor JELL-O
    1 tub (8 or 12 oz. COOL WHIP topping, thawed

    Place cake rounds back in clean cake pans. Pierce each round with large fork at 1/2" intervals.

    Stir 1 cup of water into each flavor of gelatin in separate bowls until completely dissolved. Carefully pour red gelatin over 1 cake layer and the lime gelatin over the second cake layer. Refrigerate 3 hours.

    Dip 1 cake pan in warm water for 10 second; unmold onto serving plate. Spread with about 1 cup of the whipped topping. Unmold second cake layer; carefully place on first layer. Frost top and sides with remaining whipped topping.

    Refrigerate at least 1 hour or until ready to serve. Decorate as desired.

    Here's a slightly different one:
    LEMON CAKE
    1 pkg lemon cake mix
    1 pig instant lemon pudding
    3/4 cup water
    3/4 cup oil
    4 eggs
    1/2 cup lemon or orange juice
    2 cups powdered sugar

    Combine lemon cake mix, pudding mix, water & oil. Mix & beat 5 minutes. Add eggs, one at a time & beat 5 minutes more. Bake 40 minutes in a preheated 325° oven in a greased & floured 9x13" pan. When done, prick the top of the cake. Mix fruit juice & powdered sugar. Pour over cake while still warm.~~My Family's Favorites

    I believe I know the one you are talking about - have recipe at home and I am at work but if you google it (Lemon Jello Cake) it is the one with the dry jello mix, lemon cake mix, eggs and oil. Glaze is conf. sugar, lemon juice poured over warm cake. My favorite cake...my mother used to make it. Great room temp or cold.

    My grandmother used to make the lemon cake you describe - here's her recipe. It's similiar to the ones already posted. Thanks for the smile - it made me think of her since it was always one of my favorites :-)

    Nana's Lemon Cake

    Amount Measure Ingredient -- Preparation Method

    1 package lemon cake mix
    1 package lemon gelatin powder
    3/4 cup oil
    3/4 cup water
    4 eggs

    Mix all ingredients with one egg - beat 4 minutes. Add 2nd egg - beat another minute. Add 3rd egg - beat one minute - 4th egg, one more minute. Bake at 350F for 35 minutes. While still hot, poke full of holes and spread with glaze made from 1 cup powdered sugar and juice of one lemon.

    Wow Becky - I'm going to make that cake tonight. It sounds just too easy. Do you make it in a bundt pan or a sheet pan?

    Hi Pat - we always make it in a 9x13 pan. It doesn't say, but I would grease and flour the pan - use a toothpick to poke the holes over the top when you take it out of the oven (or I suppose a fork would work, too). Enjoy - let us know how you liked it :-)
