LOOKING for: Chicken Salad

I searched the archives on the site and did not see the recipe that I was searching for. However, several years back I ate a chicken salad that was brought to our family's home at the death of my mother in law. The salad was very simple, but simply delicious. I know that it had water chestnuts in it and I think it was made with canned chicken breast. It did not have pickle relish or fruit of any kind. It may also have had toasted almonds but I could be getting that confused with another favorite chicken salad. If anyone has a recipe that resembles my description, I would be very happy if you shared it. Thanks in advance for responding.

    My favorite chicken salad is basicly chopped chicken celery and mayonaise and fresh lemon juice.
    Variations include water chesnuts, slivered almonds, pineapple tidbits, onions, white grapes, halved, curry powder, ginger...but don't all all those things at once.
    Try it first with just the celery, lemon and mayo and see where you want to go next.

    Check the one below but omit the Swiss cheese & grapes. Often, chicken salad doesn't have a specific recipe & is sort of "eyeballed."

    One of my favorites is very simple. I call it Herb Chicken Salad. Chop flat leaf parsley and green onions in a FP, toss with chicken add S+P to taste, bind with mayo. Don't be skimpy with thw green...you want it to end up with a nice green color.

    I just had chicken salad for dinner last night. Mine is pretty simple...diced chicken breast, celery, apples, grapes, walnuts, S&P and Miracle Whip. I like water chestnuts, too, and could have easily substituted those for the apples.

    I make a very simple chicken salad. I use the canned chicken breast mixed with miracle whip, small amount of pickle relish, finely chopped green onion and some ground pepper. Garnish the sandwich with lettuce and tomato...mmm, I may have that tonight!!

    I do a similar chicken salad. Roast chicken breats (skinned & deboned) cut into bite-sized pieces, diced red onion, diced celery including the green leaf part, I use red seedless grapes cut in two, walnuts, and lots of flat-leafed parsley bound together with real mayo. Also lots of coarse ground black pepper & salt to taste. I always allow it to sit in the frig for a few hours for the flavors to blend. At first I was gun shy about using a salad with grapes in it for a sandwich but after making this for over a decade now...it's our favorite for either eating on top of a green salad or a sandwich on whole grain bread. I made this chicken salad for a boat trip this summer and was told by our guests that it was by far the best chicken salad they'd ever eaten. Thank goodness, I'd made extra 'cause everybody wanted a second sammie. Sometimes, in the fall, I'll dice up unpeeled Granny Smith apple and add as well. If I'm going to be using it over greens, I've even added a small amount of brocolli and/cucumbers (in season).

    Chicken salad is a personal thing rather than an exact recipe...each is unique even if they contain the same basic ingredients. It's pretty hard to make a bad chicken salad.

    Use just enough mayo to moisture the ingredients...not so much the stuff in swimming in liquidy mayo sauce! We also like ours with a dash of red pepper flakes, on occassion. I don't believe I've ever made it the same way twice.
