I make this every year and use very little milk sometimes none at all. I use frozen corn, block of cream cheese and half a stick butter. So rich and sinful but oh so good.
It's requested time and again.

Totally different taste with another cheese, at least for me.
I've made a mexicorn "soup" with American cheese and frozen corn with peppers and onion.
The cream cheese and the butter on this is so good and great for a holiday dinner. I've done the other with hamburgers, steak and the like.
