LOOKING for: Potato Rolls

Hi Everyone! I'm new to this forum. Have belonged for over a year, but have hung out on the kitchen, appliance and decorating forums as I was obssessed with remodeling my home.

Now that's done and I'm preparing my first Thanksgivng in my new kithcen. My new oven has a proofing feature, so I've decided I'd like to try yeast rolls, the real home-made deal. While I love to cook and am considered a good cook, bread baking is not something I ever do. I'm a real novice in this department.

Does anyone have a good recipe for potato rolls?

Hi, Beth! What's a proofing feature? This is one I like:
REFRIGERATOR ROLLS (makes 4 dozen)
1 (1/4 oz) pkg active dry yeast
1 1/2 cups warm water
2/3 cup sugar
1 1/2 tsp salt
2/3 cup shortening, melted
2 eggs, lightly beaten
1 cup warm mashed potatoes
5 cups flour
1/2 cup butter, melted

Dissolve yeast in warm water in a large bowl. (Too hot will kill the yeast.) Add sugar & next 4 ingredients. Mix well. Sift flour; add to potato mixture. Beat well. Knead 5-10 times on a well-floured surface until smooth & elastic. Place in a greased bowl & cover with a damp cloth. Chill at least 8 hours. About 2 hours before baking, roll out dough & cut into circles. Fold circles in 1/2 to form rolls. Place rolls close together in a reased 13x9x2" pan. Brush tops with melted butter. Cover pan with a towel & let rise in a warm place, free from drafts, 1 to 20 hours or until doubled in bulk. Bake in a preheated 375Â° oven for 12-15 minutes.~~Food for Thought

Thanks for your recipe, Ginger. I'm giving it a go. Your directions were very helpful, so I hope it turns out.

I live in Utah, not warm, beautiful St. Thomas. And this time of year it's cool outside, and my house is about 68-70 degrees inside. Therefore my proofing function on the oven is essential. It allows the oven to be set at 89 degrees and maintain that constant temperature for proofing the dough. Every time the recipe calls for letting the dough rise, I put it in the oven (along with a pan of boiling water so the oven stays sufficiently humid) and the dough rises even though the room temperature is much lower than desired. This would not be a problem in summer!

I hope you have a wonderful day on your lovely island. I vacationed in Tortola and St. Thomas in 1979 and still have many fond memories of both locations.!

I never heard of that proofing feature. What a great thing! I always just set the bowl of dough on top of my washer (stackable unit in a closet.) In this climate it's perfect but I can see how useful that function is in a cold climate. Hope you like the rolls & that you enjoyed your turkey day.
