RECIPE: Broccoli Casserole

My DIL asked me to bring a broccoli casserole or some type of veggi casserole for Thanksgiving dinner. I've never made one and wonder if anyone has a T&T recipe? I will have to make it the night before and reheat it when I get there. Thanks.

    I just make a cheese sauce:
    2 T butter
    2 teaspoons grated onion
    sautee for a minute or 2
    add 2T flour and stir'
    Whisk in a cup of warm milk
    And cook for about 3 minutes,
    add 1/2 cup grated sharp chedder...or about 1/2 a cup of sharp chedder cheese spread ( like Kaukana club)
    Make double the recipe
    Place cooked rice in the bottom of a baking dish
    Add frozen chopped broccoli....salt lightly
    Cover generously with the cheese sauce
    Add toasted bread crumbs
    And sprinkle with parmesan cheese.
    Bake at 350 or hotter if something else needs a hotter oven, until bubbley and the broccoli is tender.
    There are a lot of fancier ones....you could caa a can of mushrooms, and or sliced water chesnuts or use a wild rice blend etc etc...
    But this is quick easy and good.

    Caution, don't continue reading if you object to the famous "cream of....." soups!

    This is my ultimate favorite comfort food and I've been making this since my friend gave me the recipe in 1975.

    BROCCOLI CASSEROLE
    2 packages frozen chopped broccoli, thawed and patted dry
    1 cup mayonnaise
    1 can cream of mushroom soup
    2 eggs, beaten
    8-10 ounces grated cheddar cheese (divided 2/3 - 1/3)
    Buttered bread crumbs

    Mix together, reserving 1/3 cheese and buttered crumbs for the top. Pour into 10" square pan. Mix reserved grated cheese with buttered crumbs and sprinkle on top. Bake at 350 for 45 minutes to one hour.

    Here's another casserole I made just a couple of weeks ago and we really enjoyed it, this one is from Taste of Home (I used regular products, not reduced fat or low sodium).

    CHEESY BROCCOLI CASSEROLE
    1 10 ounce package frozen chopped broccoli, thawed and patted dry
    2 cups (8 ounces) shredded reduced fat cheddar cheese
    1 packages (6 ounces) reduced sodium stuffing mix
    1 small onion, finely chopped
    1 egg, beaten
    1/8 teaspoon ground nutmeg
    Dash pepper
    1 cup fat free milk
    1 cup reduced sodium chicken broth
    2 bacon strips, cooked and crumbled

    In a large bowl, combine broccoli, cheese, stuffing mix, onion, egg, nutmeg and pepper; mix well. Gradually stir in milk and broth. Place in 2 quart baking dish coated with non-stick spray. Bake, uncovered, at 325 for 50-55 minutes and sprinkle with bacon.

    Broccoli Casserole

    2 boxes frozen broccoli florets
    1 roll Kraft garlic cheese
    1/2 medium size onion, chopped
    butter
    1 can cream of mushroom soup
    horseradish (optional)

    Cook broccoli according to package directions and drain. Place in a greased casserole dish.
    Melt 1 - 2 TBS butter in skillet and saute onion.
    In the top of a double boiler put cream of mushroom soup and garlic cheese (cut in to pieces). Heat until cheese melts. Add sauted onion and 1/2 tsp horseradish if desired. Heat thoroughly and pour over broccoli. Bake at 350 for approximately 30 minutes or until bubbly.

    This is DS's favorite, and as Woodie said, don't read if you can't stand the cream of soups recipes.

    2 pkg. frozen broccoli, thawed and dried
    1/2 c. onion and celery, sauted in 1/4 c. butter
    Mix
    brocolli, onion and celery,a can of cream of mushroom soup and a can of cream of chicken soup, a small jar of cheese whiz and 1 cup of cooked rice.
    Put in greased 9X13 casserole and sprinkle with paprika and bake at 350 for 30-45 min.

    LOL Woodie, I can do the cream of ..but I don't do the mayo. Fuss fuss fuss... ;-) fwiw, I usually substitute a full cream yoghurt for most recipes that call for mayo. Who knows, there may be other weirdos like me out there.

    This was a hit at a baby shower I attended and I asked for the recipe. Later, I made it for a baby shower I hosted. Afterward I was asked for the recipe, and then asked to take it to another event. It's a tried and true hit.

    Broccoli Supreme Casserole

    * 2 (10 oz.) packages frozen chopped broccoli
    * 3 C cottage cheese (1 large container is perfect)
    * 3 eggs
    * 6 Tbsp. butter
    * 1/3 C flour
    * 1/4 C finely minced onion (I use 1 small onion)
    * 1 (8 oz.) can whole kernel corn, drained
    * 1/2 pound cheddar or swiss cheese, diced (I use cheddar)
    * 1/2 tsp. salt
    * 1/4 tsp. pepper
    * few drops hot pepper sauce
    * 2 slices bread (white or wheat)
    * 1/2 C crumbled bacon (optional)

    Cook broccoli according to package directions and drain. Combine cottage cheese, eggs, 4 Tbsp. butter and flour in flood processor or blender. Blend until cottage cheese mixture is smooth and creamy; pour into large bowl. Fold in broccoli, onion, corn (drained), cheese, salt, pepper, and hot pepper sauce. Pour into a greased, deep 2-1/2 quart casserole.

    Make soft bread crumbs by tearing 1 bread slice into blender container and blending on low speed until soft crumbs have formed. Repeat with remaining bread slice. Melt remaining 2 Tbsp. butter in skillet. Add crumbs and saute until golden brown (over just above medium heat, this takes about 15 minutes). Sprinkle buttered bread crumbs and bacon over cottage cheese mixture.

    Bake at 350F for 1 hour or until mixture is set. Makes 8-12 servings.

    Ms. Azadi - my friend who gave me the recipe many years ago never told her husband that there was mayo in it because he wouldn't have eaten it, but he ate it all the time and liked it.

    We've been making this broccoli casserole for MANY years, since the 1970's. It will be at our Thanksgiving dinner again this year.

    Broccoli Casserole

    1 bunch fresh broccoli, cooked al dente
    1 can cream of mushroom soup
    1 small onion, chopped fine
    1 cup mayonnaise
    1 egg, lightly beaten
    2 cups grated cheddar cheese
    Ritz crackers

    Cook broccoli, drain.
    Mix all other ingredients together, except crackers.

    Add the wet mixture to the broccoli.
    Put in baking dish and add crushed Ritz crackers on top.

    Bake at 350 deg. for about 45-60 minutes.

    Of course we make more than one recipe. Two will fit a 9 x 13 dish.

    It's delicious.

    My recipe is :

    frozen broccoli cuts
    velveeta cheese
    butter
    garlic
    ritz crackers

    cook broccoli, drain and put in baking dish. Add cheese some butter and garlic. Then crush ritz crackers with some melted butter and sprinkle on top. Bake 30 mins at 350°

    Woodie, I do your first one but mine doesn't call for any eggs and it uses cheddar crackers for the topping.
