RECIPE: Tom Kha (Coconut Soup)

(Coconut Soup)

2 cups chicken stock or broth

1 inch piece of galangal, sliced

Lemongrass, smashed (about 6 inches)

Zest of large lime

1/2 teaspoon Thai chili paste

1/2 can coconut milk

Fresh squeezed juice from one large lime

1 tablespoon fish sauce

2 teaspoons brown sugar

1/2 cup cooked chicken (or turkey)

Cilantro for garnish

Combine stock, galangal, lemongrass, zest, and chili paste in saucepan. Simmer for about 10 minutes. Strain stock, then add coconut milk, lime juice fish sauce, and brown sugar. Cook for a few minutes and check seasoning. Add chicken for a minute or two, just to heat. Garnish with cilantro.

    Thanks, HanArt. I made some soup that was very similar, but it took a lot longer and was way more involved.

    Ashley thought it was "too weird" but I really liked it and the boss loved it. Now I'll try it again, a bowl for me and one for the boss.

    One of the dishes I like served with Pad Thai is Tom Kha
    (Coconut Soup).

    1 tablespoon vegetable oil
    1 shallot, thinly sliced
    1/2 teaspoon minced garlic
    1 tablespoon minced lemon grass
    1 teaspoon dried red chili flakes or to taste
    1 teaspoon ground chili paste, or to taste
    1 1" piece of frozen or fresh galanga, thinly sliced and bruised with the back of a knife
    3 cups homemade unsalted or canned low-sodium chicken stock
    2 tablespoons fish sauce or to taste
    1 teaspoon sugar
    2 cups unsweetened coconut milk (I use low fat)
    1/2 lb. chicken breasts, skinned, boned, and cut into small, thin slices (I usually use about 1/4 lb. of chicken)
    1 cup straw or white mushrooms
    1-2 tablespoons fresh lime juice (to taste)
    6 fresh cilantro sprigs, chopped, for garnish

    Heat the oil in a saucepan over medium heat until moderately hot. Add the shallot, garlic, lemon grass, chili flakes, and chili paste and brown slightly, about 30 seconds. Working quickly and without burning the spices, add the galanga, chicken stock, fish sauce, sugar and coconut milk. Bring to a boil and add the chicken. As soon as it comes to a second boil, turn off the heat and add the lime juice and mushrooms. Serve immediately. Garnish with the cilantro.

    This sounds interesting-will have to get out my Thai cookbook and familiarize myself with some of the ingredients and then see if I can find them here.

    Just wanted to report back that the soup was delish!!
    I took some to my brother and he also loved it and he's pretty finicky!

    That's one of my fav combos but dh doesn't like the taste of coconut milk at all so I rarely make dishes with it.

    This soup and an almond joy for dessert! AmerAsian combo. ;-)
