LOOKING for: Morning Glory Muffins

I'm looking for a recipe for coffee-house style "Morning Glory Muffins"; the ones with grated carrots, raisins, coconut, etc.

I've tried some on a few recipe sites but all so far are pretty lackluster. I think the ones I've tried in coffeeshops had some bran in them too.

    These sound like what you're looking for, although they don't have any bran in them. I like these a lot - lots of good things, and really moist, too.

    A. M. Delight Muffins

    2 cups flour
    3/4 cup sugar
    2 teaspoons baking soda
    1 1/2 teaspoons cinnamon
    1/2 teaspoon salt
    3 eggs
    1/2 cup oil
    1/2 cup mik
    1 1/2 teaspoons vanilla
    2 cups apples -- peeled and chopped
    2 cups carrots -- grated
    1/2 cup coconut -- flaked
    1/2 cup raisins
    1/2 cup almonds -- sliced

    In a large bowl, combine flour, sugar, baking soda, cinnamon and salt. In another bowl, beat eggs; add oil, milk and vanilla. Mix well; stir into dry ingredients just until moistened. Fold in the remaining ingredients. Fill greasd or paper-lined muffin cups three-fourths full. Bake at 375F for 20-25 minutes or until muffins test done.

    NOTES : Can substitute applesauce for half of the oil. Use the food processor to grate the apples and the carrots - no need to peel!

    Very similiar to Becky's. I know I got this recipe here or on the Cooking Forum but neglected to record the original poster's name.

    Morning Glory Muffins

    2 Cup flour
    1 Cup sugar
    2 Tsp baking soda
    2 Tsp cinnamon
    1/2 Tsp salt
    2 Cup grated carrot
    1 large Granny Smith apple peeled, cored and grated
    1/2 Cup raisins
    1/2 Cup chopped pecans
    1/2 Cup shredded coconut
    3 eggs
    2/3 Cup melted butter
    2 Tsp vanilla

    In a large bowl, mix flour, sugar, baking soda, cinnamon and salt. Stir in carrots, apple, raisins, pecans and coconut.~
    In another bowl, beat eggs. Stir in melted butter and vanilla. Pour over the dry ingredients and stir just until moistened.

    Spoon batter into greased or paper lined muffin tins. Bake at 350 degrees F. for 20 to 25 minutes ~

    Here's mine:

    Morning Glory Muffins
    12 Servings

    2 Cup Flour
    1/2 Cup Raisins
    1 Cup Sugar
    2 Tsp Baking Soda
    2 Tsp Cinnamon
    1/2 Tsp Salt
    2 Carrots Grated
    1 Apple, Green Grated
    1/2 Cup Almonds Sliced
    1/2 Cup Sweet Shredded Coconut
    3 Eggs
    2/3 Cup Vegetable Oil
    2 Tsp Vanilla

    Soak raisins in hot water to cover for 30 minutes; drain thoroughly. Preheat oven to 350. Mix flour, sugar, soda, cinnamon & salt in bowl. Stir in raisins, carrots, apple, almonds & coconut. Beat eggs with oil & vanilla to blend. Stir into flour mixture until just combined. Divide into muffin cups. Bake until golden brown & tested, 20 - 22 minutes. Cool 5 minutes before removing from pan.

    All of those recipes sound excellent. But they are all missing something I think is important in a Morning Glory muffin - at least when I buy that mix from charities LOLOLOL. I think it is grated orange peel. Also, I seem to remember they had carrots and pineapple? Maybe sub a little drained crushed pineapple for some of the shredded apples and add a touch of orange peel.
