I have a lactose intolerant friend and found it hard to host parties and have enough of a variety of things for him to eat. I found out that he loves deviled eggs so I make them especially for him along with a few other things. Here's the recipe I use:

    Deviled Eggs

    12 hard-cooked eggs
1/4 cup light or regular mayo depending on taste
    2 tablespoons vinegar
2 tablespoons butter or margarine(for my friend I use lactose free margarine spread), softened
    1/2 tablespoon sugar
    1/2 teaspoon pepper
    1/4 teaspoon salt
1/2 cup frozen chopped spinach, thawed and squeezed dry
    Chopped chives

Slice eggs in half lengthwise; remove yolks and set whites aside. In a small bowl, mash yolks with a fork. Stir in the mayonnaise, vinegar, butter, sugar, pepper and salt. Add spinach and mix well. Spoon into egg whites. Top with chives.

I sometimes add prepared mustard to the mixture to make them more traditional tasting.

    Enjoy!

I just cook the amount of eggs I want. Slice in half long way. Mash the egg yoks add a little sugar, dash of vinegar, salt, pepper and a little mustard, and enough mayo to your likeing, until the right texture to refill egg white.. You can also add some pickle relish if you like. Ann

Plays in the Dirt, here is a link to a thread on the cooking forum with lots of suggestions for deviled eggs. You should be able to find something there that your husband will like.

Mash the yolks with equal parts mayo and Homemade Chili Sauce*.

I keep them for snacking in a tuperware container with a paper towel on the bottom to keep them from "rolling".

*I don't know if this product is available in your area but it's the only brand I like. It's a rounded 12 oz. jar and the sauce is a tomato base.

My husband liked 2 parts mayo to 1 part canned California chopped chiles, drained (Ortega blue can).

There have been quite a few threads about 'deviled eggs' (I spell it 'devilled' - your way of spelling it looks to me like 'de-v-eye-ld'!). In fact, here in Australia they're just called Stuffed Eggs, which is a lot less devilish! Browse through the link below.

I don't use a recipe. I just mash the yolks with home-made mayonnaise, add a bit of tomato sauce (ketchup) or chilli sauce or a tad of tomato paste, or some commercial fish cocktail sauce or thousand island dressing, and some finely chopped shallots. If I'm feeling fancy, I sprinkle with a tiny bit of paprika.

I dont have a specific recipe per se. I boil my eggs and mix the yolk with mayo, a touch of mustard, salt, pepper, a tiny bit of chili powder, and a "knife-tip" (this would be a little bit on the tip of the knife) of horseradish. These are always a hit and I have had to give out this recipe so often.

My deviled egg recipe is very average. I'll email it to you. Hope you find just the right one.
