RECIPE: Oh Nuts!

These are a couple of good snacking nuts for the Christmas season:

Glazed Pecans

1/4c unsalted butter

1/4c white Karo syrup

1 tsp salt

2T water

1# pecan halves

Preheat the oven to 250° (no higher). Combine butter, karo, salt and water in heavy 1 qt saucepan. Bring to a boil. Stir in pecans. Mix well and spread on baking sheet covered with foil. Bake 50-60 minutes stirring about every 10 minutes. Let set until thoroughly dry before putting in container.

This is from the Frog Commissary Cookbook and a real favorite at our family reunion:

1 pound walnut or pecan halves

1/2c sugar

2 1/2 T corn oil

1T vanilla

1/4 tsp salt

1/8 tsp pepper

1/4 tsp ground coriander

1/4 tsp cinnamon

1/4 tsp nutmeg

1/4 tsp allspice

Blanch the nuts for one minute in boiling water. Drain well. While nuts are still hot, toss with combined sugar, corn oil, and vanilla. Let stand for 10 minutes

Arrange on a large cookie sheet (with sides) and bake in a preheated 325° for 25-30 minutes turning every 5-10 minutes until nuts are light brown and crispy.

While nuts are baking, combine remaining ingredients in a large bowl and mix the hot nuts with the combined spices. Spread in a single layer to cool and store in an airtight container.

    Diane's Home Cookin Chapter: Snacks

    Teriyaki Almonds
    ================
    2 cups almonds
    1 teaspoon lemon juice
    1 tablespoon vegetable oil
    1/2 teaspoon salt
    1/4 teaspoon onion powder
    1 tablespoon soy sauce
    1 teaspoon brown sugar
    1/2 teaspoon ginger
    1/4 teaspoon garlic powder
    . Preheat oven to 325 degrees F. Place nuts in a 13 x 9-inch baking pan.
    Bake for 5 minutes. In a bowl, combine soy sauce, lemon juice and brown
    sugar. Stir until sugar is dissolved. Stir in oil, ginger, salt, garlic
    and onion powder. Add heated almonds. Toss to coat nuts. Return nuts to
    baking pan. Bake 10 minutes longer, turning once. Cool and store in an airtight container.


    Oranged Walnuts
    ===============
    1-1/2 cups sugar
    1/4 cup orange juice
    1/4 cup water
    1 teaspoon grated orange peel
    2 cups walnut halves
    . Combine sugar, OJ, water; cook to softball stage (234°).

    Remove from heat; add walnuts and orange peel. Mix until syrup becomes
    cloudy and hard to stir.

    Quickly turn out onto waxed paper or buttered cookie sheet. Separate
    into clusters with two forks.

    Makes 3 cups.

    Ono Honey Macadamia Nut Candy

    1/2 cup honey
    1/2 cup maple syrup
    pinch salt
    4 tablespoons milk
    1 teaspoon vanilla extract
    1 cup roasted macadamia nuts
    . Combine ingredients, except nuts, in a large pot. Bring to a boil over
    medium heat and cook until mixture thickens. Remove from heat, then
    beat until soft and creamy. Add nuts; mix well to coat. Spread on wax
    paper and allow to harden

    My friend, Melanie, gave me this recipe a couple of years ago. It's a staple at our house:

    MELANIEÂS SUGARED PEANUTS
    1 cup sugar
    1/2 cup water
    2 cup raw Spanish peanuts (the kind with the red skins on them)
    Preheat oven to 300° F. Combine water and sugar in a saucepan over medium heat. Cook until sugar is completely dissolved. Stir in peanuts and continue to cook over medium heat until peanuts are completely sugared (no syrup remains). Pour peanuts onto an ungreased baking sheet (I use a jellyroll pan so none of those critters escape) and spread out as much as possible. Bake for about 20-30 minutes, stirring every 5 minutes. Allow to cool and break any chunks apart. Store in an airtight container.
