Have had that set-up for 25 years. Never been an issue.

We thought the same thing so pushed the knobs away from the middle of the tilt out tray.

We have cup pulls on two sink front and never notice touching them. Remember your counter will overhang about 1.5 inches.

Never even thought about that. I've had 2 oval knobs on my sink tilt out for 13 years and never an issue.
The deep sink is a back breaker though, but that's a different story! :>)
