    This is recipe I have used. It's from Southern LIving.

    Hopping John

    1 large onion chopped
    2 large garlic cloves
    2 16 oz can drained black-eyed peas
    2 cups chick broth
    1 cup uncooked reg rice
    1 tsp salt
    2 Tbl butter

    Saute onion and garlic in butter until tender.
    Add rest of ingredients - cook 20 minutes until liquid is absorbed and rice is tender

    And of course serve with pork and turnip greens for New Years.

    This is one of my hubbie's favorite dishes. Sorry I don't have a "formal" recipe, but this is how I make it.

    Hoppin John

    1 cup uncooked rice
    1/2 onion, chopped
    about 6 slices cooked bacon (or to taste)
    Frank's Hot Sauce (to taste)

    Cook the rice as directed on package, adding chopped onion with water and salt.

    After the rice is finished cooking, add the chopped, cooked bacon. Add as much hot sauce as desired (I add quite a bit - we like ours with a "kick"). Keep adding hot sauce until all the rice is nicely coated.

    Delicious!

    Ah geez.....that's what I get for typing recipes so late at night! Yes, of course.....my recipe calls for a can of drained, black-eyed peas, added into the rice after the rice is finished cooking. For an extra zing, I sometimes use black-eye peas with jalapeno.

    Could one use kidney beans?

    Monique - I'm sure you could successfully substitute kidney beans, but Hoppin John traditionally calls for black eyed peas for good luck for the new year!

    I also have a recipe that I've made a few times, but its basically the same as the recipes above which include bacon, onion, rice and Louisiana hot sauce, except that it uses dried black eyed peas instead of canned, so I won't bother to post it. The first time I had it was at a friend's New Year's Eve party in 1976 and she was doing an historical and patriotic menu for the bicentennial.

    I just think it sounds good:)I'll try it..Personally..I love hot sauce..often sub w/ Sambal Oelek too..

    We like it best done up separately, with the beans cooked up very flavorfully with lots of ham or bacon and so on, then served over the rice, which makes a wonderful counterpoint. Major comfort food!

    Ah geez-- all those recipes sound wonderful, and I am a big fan of Hoppin' John-- hmmmm and since I am so easily
    influenced and just happen to have all the ingredients, guess what? DH does not care for this dish,, but why can't I remember that?
