I had these at a Christmas party and I loved them.

SPINACH BALLS

Mix together:
1 pkg. Pepperidge Farm Stuffing Mix
1 Box Frozen Chopped Spinach
3 Eggs (beaten)
1/2 c. Parmesan Cheese
1/2 Stick Oleo (melted)
1 tsp. garlic Powder
1/2 tsp. pepper
1/2 tsp. Thyme

Form into balls and freeze. Bake at 375 for about 30 minutes.

kjacja: that sounds like it might be it. I don't think they used a stuffing mix in it, probably just bread crumbs. Your recipe sounds delicious. I'm going to make these for sure! Thanks. Marg

I've been making those spinach balls for more years than I want to count and they are always a hit. Besides being tasty, you can keep them in the freezer and just pull some out when you want them. You will love them.

This recipe sounds great! Do you squeeze the spinach dry first? And how big do you make the balls? Thanks.

I made the Spinach Balls twice now. The first batch turned out a little to crispy so I reduced the cooking time for the second batch and they were great! Marg

Have you ever used fresh spinach??

I have only used frozen so far. I really don't see why you couldn't use fresh. I don't see any problem with using fresh spinach, it's worth a try. This is just my first time making it, perhaps someone who has made it more often will know. Marg
