RECIPE: Lemon Bars without a fork?

Does anyone have a recipe for Lemon Bars or Squares that one can pick up and eat with fingers (that's not too messy)?

    these ones are great! My kids devour them..

    Poppers Lemon Bars (Barb)

    1 Cup Butter..use the real thing
    2 Cup Flour
    1/2 Cup Powdered sugar

    Mix these ingredients till they resemble small clumps. Pat FIRMLY into the 9x13 pan. Bake 15 minuters at 325 degrees.~

    While baking:
    Mix together 4 eggs, 2 cups sugar, 1/3c. lemon juice, 1/4 c. flour. Mix well. You can also put this into a blender if you want. Pour onto baked crust. Bake for another 25 minutes at 325 degrees. Cool and sift power sugar on top. Cut, eat and enjoy.

    CAUTION!!! These Popper lemon bars are very addicting!!

    These are the best....From Ginger several years back

    LEMON BARS DELUXE
    2 1/4 cup flour
    1/2 cup confectioners' sugar, plus additional for sprinkling
    2 sticks butter
    4 beaten eggs
    2 cups granulated sugar
    1/3 cup fresh lemon juice
    1/2 tsp baking powder
    Preheat oven to 350°.
    Whisk together 2 cups of the flour & the confectioners' sugar. Cut in the butter until the mixture clings together. Press the dough into a 13x9x2" baking dish. Bake 20-25 minutes or until lightly browned. Meanwhile, beat together the eggs, granulated sugar & lemon juice. Mix the remaining 1/4 cup flour with the baking powder; stir into the egg mixture & pour over the hot baked crust. Bake for 25 minutes longer. Remove from the oven & sprinkle w/confectioners' sugar. Cool. Cut into squares.~~

    These are similar but the first adds coconut and the second adds white chocolate.

    Lemon Coconut Bars

    Cookie type: bar

    This is from my MomÂs collection. This recipe came out of the Farm Journal Christmas Book, 1970.

    Ingredients

    1 cup sifted flour
    ¼ cup flour
    2 eggs beaten until light
    ¼ cup sifted confectioners sugar
    ½ cup butter
    ¾ cup sugar
    2 tbsp lemon juice
    1 teas grated lemon rind
    ½ cup flaked coconut
    ½ teas baking powder
    ConfectionerÂs sugar

    Directions

    Preheat oven to 350 degrees. Combine 1 cup flour and ¼ cup confectionerÂs sugar. Cut in butter until mixture resembles a coarse meal. Pat mixture evenly into a 9x9x2 inch pan. Bake at 350 degrees for 15 minutes. Cool. Combine ¾ cup sugar, ¼ cup flour and baking powder. Add eggs and blend. Then add lemon juice, rind and coconut. Spread this mixture on top of the crust. Bake at 350 degrees for 25 minutes. Cool. Sprinkle with confectioners sugar.


    White Chip Lemon Bars

    Cookie type: bar

    This is a favorite from HersheyÂs Best  Loved Recipes, 2000. These cookies are yummy, tart and sweet all at the same time. This recipe makes 36 bars.

    Ingredients

    1 ¼ cups flour
    1 cup sugar
    1/3 cup butter, softened
    ¾ cup white chocolate chips
    2 eggs
    ¼ cup lemon juice
    2 teas grated lemon peel
    powdered sugar

    Directions

    Preheat oven to 350 degrees. Stir together 1 cup flour and ¼ cup sugar in a medium bowl. Cut in butter until mixture resembles coarse crumbs. Press mixture into the bottom of a 9 inch square baking pan. Bake 15 minutes or until lightly browned. Remove from oven and sprinkle white chocolate chips over crust.

    Stir together eggs, lemon juice, lemon peel, remaining ¼ cup flour and remaining ¾ cup sugar in a medium bowl. Carefully pour over chips and crust. Bake 25 minutes or until set. Cool and sprinkle with powdered sugar. Cut into bars.

    Know the PROS here might not approve, but these are great!!

    Ingredients:
    1 package Angel Food Cake Mix
    21 ounces Lemon Pie Filling

    Directions:

    Combine cake mix and pie filling. Stir until well mixed. Pour in an ungreased jelly roll pan. Bake 20-25 minutes at 350F degrees. Sprinkle with powdered sugar. Cut into squares.
