Make a classic strata...
Bread, cheese, milk and eggs...
I often add mushrooms green and red peppers, caramelized onions, pepperoni, Italian sausage, Kalmata olives...etc.
BUT ...you don't have to make a recipe.
Just put bread into a casserole....with the add on's of your choice...onions, garlic, tomatoes....or nothing!
And them mix up "stuff" in the ratio of 1 egg per half cup of milk....and grate some cheese....The amount really doesn't matter a lot....more is better......and pour the egg milk mix over....let it sit until the bread absorbs....add more....a d repeat until the dish is full.
Bake at 375 until the dish is firm......until a tester comes out clean.

There's not much you can do to dress up a plain breakfast casserole with only American cheese. I'd make it like Linda suggested but use tiny cookie cutters and cut out stars or bells or some other holiday shape for the top layer of bread.

There are lots of things you could do to dress it up, but they probably asked for plain because of all the picky eater kids. There's always somebody who doesn't like something. My friends kids threw a fit once when I substituted grated romano for parmesean on spaghetti. You could use orange cheddar and white mozzarella also for a little visual interest.
