I doubt this is it, but there's a Champagne Salad that is a dessert and doesn't use champagne. It's served semi-frozen and is sort of like an ice cream or frozen fruity cheesecake. It is really heavy (because it's frozen!) although it's not really considered a regular type cake. Just in case, here's the recipe.

That recipe sounds good but it is not what I was looking for. This is an actual cake that is made with bourbon sometimes. It is very heavy. I will keep looking around. I hear people call it a "Pink champagne" cake sometimes.

I would bet the recipe you are looking for is just a regular Champagne cake that maybe someone decided to subsitute bourbon in place of the champagne? Or, maybe it is the typical Champagne cake made with a Bourbon custard? Or, possibly it is really some variation of a bourbon cake, and not a Champagne cake at all and someone just named it wrong.
