RECIPE: Fish Chowder

My mother makes this soup all the time. My husband and daughter really like it (I don't like fish much).

Fish Chowder

2 medium onions, chopped

2 medium peppers (1 red, 1 green),chopped

2 cloves garlic, crushed

2 Tbsp butter or margarine

1 (28 oz, 796 mL) can tomatoes, broken up

½ Tbsp thyme

¼ tsp cayenne (optional)

2 medium potatoes, peeled and cut in ½-inch (1.25 cm) cubes

3 cups water

1 cup dry white wine (or water)

1 pkg (250g) cream cheese, cubed

1 kg (2 lbs) fish fillets (haddock, cod, or pike), cut in chunks

¼ cup chopped parsley, or to taste

2 tsp salt

¼ tsp pepper

In a large pot, sauté onions, peppers and garlic in butter until tender. Add tomatoes, thyme and cayenne; bring to a boil. Add potatoes, cover and simmer 10 minutes. Add water and wine; bring to a boil. Reduce heat, add cubed cream cheese and stir until cheese melts. Add fish and parsley; bring to a simmer; cover and cook 4 minutes or until fish flakes easily with fork (donÂt overcook). Stir in salt and pepper. Serve in warm bowls. 6-8 servings.
