Coffee/Tea Service Prep ?

Almost got myself psyched up to start the tea service, but have a question about preparing the items. Those of you who have done one (or more), do ya'll polish before or after you're done? Or both? Mine's plate and I am just not sure which would be better for the final apearance. It isn't horridly tarnished, but my little inner perfectioninst wants to remove every single speck of it..... Ideas?? Suggestions??

I cleaned the places I was going to leave exposed real good
before I started working on it, so there wouldn't be any silver cleaner on my finished pieces.

Can't wait to see it curb!

I polished the brass trays, mainly to get them good and clean, and just cleaned w/soap and water the coffee pots. If I were using a silver or plated set, I'd polish first and then seal it w/a clear lacquer, if I wanted it to stay shiny. Depends on if you want a vintage look, I suppose, whether or not you polish.
