When is soonest you can seal grout?

Time is of the essence this week. Must have "installed" by Sunday noon.

-When is the soonest I can seal a grouted piece?

-How long between coats?

Oh, and the second part of this is: I've got "regular" grout sealer at home, but want to use the glossy finish. Can I use the regular and put the glossy over it? (Have already put one coat of regular on two of the pieces).
