I think the more elaborate profiles are congruent with a classic/traditional/quasi-Victorian look. The simpler, cleaner profiles appear more modern. For safety's sake avoid sharp corners and remember that tiny grooves and indents take extra effort to keep clean. If they are not clean bacteria will flourish there.

We just had granite installed in our kitchen with a 1/4 beveled edge. We absolutely love the look. It has very "clean" lines without being as plain as a simple eased edge. YMMV.

Goodness, it's always those last few details that keep you up all night. I agree with Sailormann, but how many choices & what edge choices do you have ? What style is you house/kitchen. What color granite did you go with ? I sell very few upgrade profiles, mostly eased (square w/ eased edge) or a bullnose edge. And I know that the ogee edge on my bar is hard to clean, dust & that knid of thing.

I always had a bullnose edge and finally put in an eased (liked the look & always saw it in the kitchens I admired). I love it. You might want to go through any inspiration kitchen pics you have and see if there is a theme.
