White Kitchen - Countertop Help!

I've read some really wonderful strings of help on this site and am hoping I might get some insight from the experts here. We are buying a new-construction condo with a kitchen that opens to the main living room space. I have selected white cabinets and stainless appliances (floors are red oak - medium stain) and the builder was going to do absolute black granite, but it seems so stark to me. Since we may rent the place in the future, my white marble countertop idea went down the drain quickly, as did soapstone, but I've been hearing/seeing good things about Virgina Mist honed granite. Also saw a nice piece of Bross Blue in leather/antique finish but am worried it might be a lot of color for what I am hoping is a neutral transition into the main room. Would love any input on the honed Virginia mist (am I going to die of fingerprint OCD) or the Blue Bross (will I get sick of it too quickly)?
