I have the most basic of the Bosch induction cooktops (one without the metal rim) and have no problems achieving a constant even simmer for as long as necessary. For example cooking dried apricots in water, once a boil is reached, I reduce to a level 1 and hold the temp there to a very low simmer for about 2 hours and don't even have to watch it except to stir occasionally.
