LOOKING for: Quick! Need for tomorrow

I have fresh pumpkins. Need to make pie for early T-Day dinner tomorrow. Help?

    Cut up.....seed peel, cover with water.....boil until tender......drain really well....puree and measure and proceed as per instructions on the Libby's can!

    PUMPKIN PIE
    Pastry for 1 crust pie
    2 large eggs
    1/2 cup sugar
    2 TBL molasses
    Pinch of salt
    1 tsp ground ginger
    1-2 tsp cinnamon
    1/4 tsp ground cloves or allspice
    2 cups pureed cooked pumpkin
    1 1/2 cup smilk, half-and-half or evaporated milk

    Prepare the pie shell with a fluted standing rim. Brush lightly with egg white. Preheat oven to 450°. Beat the eggs w/the sugar, molasses, salt & spices until well blended. Add the pumpkin & milk & mix well. Adjust the seasonings.
    Turn the mixture into the prepared crust & bake on the lower shelf of the oven 10 minutes. Lower the heat to 400° & bake until a knife inserted in the center comes out clean, or about 30 minutes longer.~~ Craig Claiborne

    Ginger, thanks for the recipe. I like molasses (and I like Craig) so I'm going to make it for Thanksgiving.

    Ginger - the pie was fantastic! Thanks again to you and Craig fr the recipe. I made some cinnamon flavored whipped cream and piped it around the edges, but it didn't really need it,I just did it for looks. Thanks pal.

    What do you mean it didn't need whipped cream? EVERY pie needs whipped cream, you heretic. LOL Never thought of flavoring whipped cream with cinnamon. Great idea!

    Oh, gosh, I forgot who I was talking to! I recant my statement - of course it NEEDED that whipped cream!

    Ginger, I was making the whipped cream with a little sugar and vanilla and at the last second I just sprinkled some cinnamon in - don't know why I thought of it, but it was really good.

    Note to self - if you pipe whipped cream onto a pie in the future, don't do it at the last minute after you've drunk lots of wine with your turkey dinner.....makes for very interesting design, LOL.

    Surely you didn't drink TOO much wine, Woodie, now did you?? My daughter in law loves the whipped cream dispenser that I have-she is related to Ginger, I think-everything in her mind is improved with it too. LOL

    Dear Craig

    Forgive me for tampering with this recipe.

    Forgive me for adding an extra egg because I used real, therefore watery, not canned pumpkin.

    Forgive me for adding a good healthy splash of bourbon.

    Forgive me for adding a 1/4 cup of melted butter.

    Forgive me for using a graham cracker crust.

    Forgive me for hiding it from my family with the intention of consuming it by myself.

    Forgive me for forgetting the whipped cream.

    All is forgiven.....but that sin of forgetting the whipped cream! Pumpkin pie without whipped cream is like....well.....latkes without sour cream!!
