Of course you can pot them up. I'm not sure when tho. Some people do that intentionally so a plant will root. That's how we rooted some of our grapes.

I'd be tempted to pot them up now. It should be warm enough for them in Texas. If you get freezes there, I'd leave them in the ground and wait form spring.
