Build shelves in front of the windows...wood or even clear (glass, acrylic)... fill them with plants and glassware that glows in the light (I actually really like the pink of the spray bottle in your photo).

Since you can't entirely block the window without blocking out all of the light, I would suggest a nice sheer roman shade. You can thus leave the shade down often and it will still let the light in. Also, you could try a thicker, patterned fabric for more coverage, but this will limit the amount of light. See the photos below for a general idea.

In some places, window block is the only light option and required when the view is directly on a neighbor. So, replacing may not be an option at any cost. Treat it as art - frame it in concert with your kitchen. Or use a blind or roman shade if you want to block the black hole at night. Reminder that when doing the dishes, pull it up or shade/blind will get dirty fast. As to shelves, I'd use glass though cleaning shelves and window would be a chore.
